Ubaliyu – a curious delicacy that springs up across the Mumbai – Ahmedabad highway near Vapi every winter

Potatoes, sweet potatoes, beans, spinach, purple yam, and lots of spices 🙂

It all goes into an earthen pot, the mouth sealed, and half buried upside down into a heap of burning cow-dung cakes! What you get after an hour or so is boiled, spiced vegetables, to be eaten as-is with a copious serving of cold buttermilk to tide over the hot spices.

Ubaliyu – literally meaning burnt over in an upside down manner!

The last two pots are still simmering in the ambers of the fire underneath. The one next to the steel plate is ready for pouring out and consuming.

And this is the final product. A spicy smokey, albeit seasonal, delicacy!
